Standards are set based on the type of fish being used and contestants must meet or exceed the percentage of BONELESS meat to leftover carcass within a specific amount of time. True Grand Masters are able to carry on conversation during thier demonstration time without injuring themselves or sacrificing the quality of the fillet.
