Our fillet knife is a 6" knife blade made of surgical stainless steel with a custom grip composit handle. We use this knife exclusively for all our demonstrations and filleting events. The flexibility of the blade is the best we have found and is excellent for use on small fish up to Northern Pike. It holds an edge very nicely and will resharpen with any sharpening system.
